Ingredients
- 1 c couscous
- 1-1/4 c chicken or vegetable broth
- 1/4 c orange juice (fresh or canned is fine)
- 1/2 c minced fresh rose petals or 3 T dried (lightly crushed)
- 1/4 c toasted pine nuts or slivered almonds
- 1/3 c dried fruit - cherries, figs, apricots, or cranberries would be great choices
- 4 T fresh herbs, minced - lovage, basil, parsley, cilantro, chives, sage, etc.
- 3 T olive oil
- 1 T lime juice
Directions
- In a small saucepan, combine the orange juice and broth; bring to a boil
- Add couscous, mix well and allow to stand for 5-10 minutes, until liquid is absorbed
- Fluff with a fork
- Whisk together olive oil and lime juice; add herbs and mix well
- Pour over couscous, and stir to combine
- Add rose petals, nuts and dried fruit; toss gently
