Custom Fields - Ability to Hide or Set a Deadline

To prevent the "I filled this out online!" frustration from my guests when they in fact did NOT fill it out online prior to print dates or venue deadlines. I would like to give my team and my volunteers peace of mind by turning off the Custom Field either visibility or with an end date. Very nervous about my 300 guests changing things for Monday's event or my 600+ guests changing dietary restrictions, etc. before our December 4 event.
